Dill-Onion Coconut Flax Crackers

For variety in our meals, I occasionally mix up a batch of these grain-free, dairy-free, egg-free, sugar-free crackers based on a recipe by Lisa Richards, CNC of "thecandidadiet.com".


Combine dry ingredients:
1/2 cup coconut flour
1/4 cup flax seed meal
1/2 tsp salt
1 tsp dried dill weed
1/2 tsp onion powder


Combine wet ingredients:
1/4 cup coconut oil, melted (I make use of the vented heat from preheating oven)
1/2 cup coconut milk


Add wet to dry. Form ball. Roll to 1/8" thick between parchment paper. Cut.
Bake at 350 degrees until edges are browned (about 20 minutes). Remove crackers as they brown, continuing to bake until all are ready.


Enjoy topped with cold coconut oil alongside your green salad and main dish!

Pet Vet


Sorting can turn up some hilarious childhood memories, such as the elaborate forms my sisters and I made and filled out when playing "Pet Vet" with our numerous stuffed animals.


Our childhood was blessed with sisters as our best friends and great imaginations that rarely let us think of being "bored."

Elderberry Harvest 2019

September seems long ago with its green grass and leaves. But the elderberries harvested by Mom and Elsa on a chill, drizzling September day are being put to good use now.



Elsa is the main consumer of these tart little powerhouses. She likes them along with homemade coconut yogurt, a variety of seeds, and toasted coconut flakes.
